Ingredients:

•  4 slices of bread (preferably slightly stale)

•  1 cup of unsweetened plant-based milk (such as almond, soy, or coconut milk)

•  2 tablespoons of flour (all-purpose, whole wheat, or chickpea flour work well)

•  1 tablespoon of nutritional yeast (optional, for a slightly savory flavor)

•  1 tablespoon of maple syrup or agave syrup

•  1 teaspoon of ground cinnamon

•  1 teaspoon of vanilla extract

•  Coconut oil or vegan butter for frying

•  Optional toppings: fresh fruit, maple syrup, powdered sugar, vegan whipped cream, etc.

Instructions:

Prepare the Batter:  In a shallow dish, whisk together the plant-based milk, flour, nutritional yeast (if using), maple syrup, cinnamon, and vanilla extract until smooth. This will be your batter.
